Oat Bran and Cranberry Muffins

Makes 12 Servings, one muffin per serving

  • 2 cup raw oat bran
  • cup packed brown sugar
  • 1 tablespoon baking powder
  • 1 tablespoon sugar
  • 2 tablespoons ground cinnamon
  • 2 tablespoons safflower oil
  • 2 large egg whites
  • cup non-fat milk
  • cup natural unsweetened applesauce
  • 1 cup dried cranberries

Preheat the oven to 425 degrees. Mix the bran, sugar, baking powder, sugar and cinnamon together in a bowl. Stir the oil, egg whites, milk and applesauce in until the mixture is smooth. Stir in the cranberries. Drop the batter into lightly greased muffin cups. Bake for 15 minutes or until golden brown. Allow about 10 minutes for cooling. Refrigerate and they will keep for one week or freeze for up to 3 months.
