Makes 8 servings
- 1 cup tomato sauce
- 1 medium leek, chopped (green and white parts)
- 1 medium carrot, sliced
- 2 stalks celery, sliced
- 2 medium zucchinis, sliced
- 2 teaspoons curry powder
- teaspoon red chili pepper flakes
- 2 tablespoons fresh cilantro, chopped (or 1 teaspoon dried)
Place all ingredients together into a large pot with 3 cups water. Stir well, cover, and bring to a simmer. Cook for about 40 minutes, until vegetables are tender. If needed, add water to replace liquid lost in evaporation.
